Emergency Biscuits (my mom’s recipe!)

A very easy recipe that takes about 7 minutes to prep and 15 minutes to cook. My mom made these all the time to go with soups and stews, or when we had more people than planned and food was lacking.

Preheat oven to 400 F (for hotter type ovens) or 425 F. Watch the first few batches so that you don’t burn them or undercook them.

Ingredients

2 cups flour

1/2 teaspoon salt

4 1/2 teaspoon baking powder

3 Tablespoons shortening (or butter is better)

1 1/4+ cup milk (or a bit more as needed to have a stiff but sloppy consistency)
Cut in dry ingredients and then the shortening.  Add milk, mix well. Should be the a slightly wet consistency, so you can add a bit of milk until it is slightly wet and when you pull out a spoon’s worth it stretches as it parts.
Lightly grease muffin tin, spoon into muffin tin

Bake @ 425 F (or 400 F in hotter type oven) till tops/tips are lightly brown  (like photo above)12-15 minutes
Makes 1 dozen
