Roast Beef (the kind we have on Sundays)
Ingredients
1 roast beef or roast pork
1/3 cup Oil (vegetable, olive, avocado…)
Salt & Pepper
Optional – garlic clove, other spices such as garlic plus etc
Prep time – 5 minutes
Cook time – approx 3hrs @ 280-300 degrees Farenheit
Instructions
Put roast in roasting pan (one of those black ones works well)
Drizzle oil over the roast
Generously salt and pepper, add optional (like garlic etc)
Cover with lid, or if no lid aluminum foil
Put in oven for approx 3 hours. If after 2.5 hours the fluid seems low add 1/2 cup or 1 cup of hot water.
Gravy
Remove roast from pan, put on plate and cover or wrap in tinfoil (if wrapped, if the oven is turned off you can place it in the oven to stay warm)
Put pan with meat fluid back on to stove and turn on the burner to medium heat
Mix 1-2 tablespoons of corn starch or flour with approx 2 cups cold water.
Do not mix with warm water – it will clump and not mix. Add this to the meat fluid
Add salt and pepper to taste, or any optional spices you like.
Stir often so that the gravy is smooth (especially if you used flour) and as thick as you like
Serve with potatoes (mashed, boiled or baked), rice, noodles or over bread.
Makes great leftovers
